Easy and delicious apple fritters: we reveal how to prepare them in just minutes!
Fried desserts are truly a great treat, one that is tempting at any time of the year and perhaps even more so in winter, when the desire to prepare many different types returns. Among the thousand recipes in which you can try your hand at, there is one that is really very easy and fast - a riot of flavors that you can then enhance as you wish.
These are round pancakes / fritters made with apples, sultanas and yogurt. Only a few minutes will pass from when you start preparing the ingredients until you are taking them out of the oil - and then you just have to have a little patience to wait for them to cool down a bit!
Ingredients for apple pancakes
- 1 apple (the variety is up to you, but consider a weight of about 250-300 grams).
- 300 grams of 00 flour.
- A jar of yogurt (125 grams). You can also use a whole white, Greek or even vanilla flavored one.
- Two or three tablespoons of sultanas (you can also omit these if you don't like them).
- 1 egg.
- 70 grams of sugar (granulated or cane).
- The seeds of a vanilla bean, or a sachet of vanillin or a drop of vanilla extract (you can also omit this if you don't have any or you don't like the scent of vanilla).
- Half a sachet of baking powder.
- 2 tablespoons of peanut oil.
- A pinch of salt.
- Cinnamon (to taste, but can also be omitted).
- Powdered sugar for garnish.
How to make apple pancakes
- Soak the raisins in a little water (two tablespoons should be about 60 grams, and for that amount you will need 250 ml of water).
- In a bowl, emulsify the whole egg and then add the sugar, whisking everything until it is frothy.
- Add the pinch of salt and the yogurt, and mix gently with a whisk or spatula.
- Also add the two tablespoons of vegetable oil and mix well.
- Sift together flour and yeast, and add them slowly to the dough, mixing with a whisk to incorporate them slowly. Try not to make lumps and when the dough becomes more consistent, continue to work it with a spatula, or if you prefer also by hand. Of course, you can also work with electric kneaders.
- Cover with cling film and leave to rest in the fridge.
- In the meantime, peel the apple and then grate it (if you prefer to feel the pieces, make it into very small cubes).
- Take the dough and add the apple, mixing well.
- Drain the raisins well, also with the help of a clean cloth or absorbent paper, and add them to the mixture.
- Heat the oil in a saucepan.
- When the oil is at the right point, drop the dough in using two teaspoons. If it is more convenient for you, you can use an icing bag separating the dough as it comes out with a pair of scissors.
- Drain the balls as soon as they are golden, placing them on a tray with absorbent paper.
As soon as they are a little colder you can sprinkle them with powdered sugar (and / or cinnamon) and serve.
A few variations:
- You can add a bit of cinnamon to the dough, if you like its aroma and flavor;
- You can soften the sultanas in 200 ml of rum, or a passito (sherry) or marsala wine (port);
- Instead of cinnamon (both in the dough and for the final garnish) you could use a small amount of nutmeg;
- You could use pears instead of apples, or mix them together 50-50;
- It is also possible to fill these pancakes with custard or chocolate sauce.
